Preheat the grill to 200°c.

Add wood chips to the smoking box and place on to the grill and close the lid. Check on the box until the wood chips burn and create smoke, then place the chicken breast on the grill grates over direct heat.

Grill the chicken for approximately 10 minutes per side until golden and the internal temperature reaches 75°c. Remove from the grill and allow to rest for 10 minutes.

Cut the smokey chicken into thin strips.

Melt the butter in a large cast iron pan then add the chicken and hot sauce and allow to warm through until the hot sauce has thickened. Remove from the heat.
6.
Stir in the sour cream and cream cheese and stir well to combine.
7.
Sprinkle over the cheddar then crumble over the Blacksticks Blue cheese before finally sprinkle over chives for a beautiful garnish.
8.
Serve with veggies, bread or tortillas and enjoy!
