Combine the ingredients for the seasoning and set aside.

Preheat two gas burners on the Jupiter Outback BBQ and set the heat to medium. Cook the onions and peppers until soft and charred in places – 5-10 minutes.

Toss the prawns with a splash of oil and half the fajita seasoning.

Thread the prawns onto skewers and transfer to the BBQ to cook for a minute each side or until pink.
6.
Transfer to cooked vegetables to a frying pan with half the seasoning and a generous splash of water. Cook until the vegetables are coated in the spice mix, then stir through the prawns.
7.
Serve the prawns and vegetables in the tortillas with sour cream, coriander and green chilli.
You could easily swap out the prawns for chicken thighs if you want to make these fajitas meatier, or use a red meat such as steak instead.
