Ensure the flat griddle is inserted. Add the smoking box filled with wood pellets and allow to come up to temperature.

Prepare the guacamole by cutting the avocado in half, pitting and placing face down over direct heat. Peel the onion, chop in half and place face down next to the avocado.

Close the lid and allow to char and smoke.

Once the avocado and onion have good grills marks remove from the grill. Once slightly cooled dice the red onion into small pieces and add to a mixing bowl. Scoop out the avocado and add to the bowl.

Add the juice of the lime and plenty of salt and pepper. Mash and mix thoroughly with a fork, then set aside.

Heat the refried beans in a saucepan on the side burner until warmed through.

Crack the eggs on the flat griddle and cook through ensuring the egg is still runny.

Remove everything from the grill and assemble as follows: muffin base, spread with refried beans, salsa, egg, a generous helping of smokey guacamole and muffin top.
