Melt the butter and mix with the brown sugar, syrup and salt on the side burner until the sugar dissolves to a caramel. Then stir in the pecans.

Spread the caramel pecans evenly in the cast iron pan.

Make the cake mix by combining the sugar, baking powder, cinnamon, nutmeg, salt and flour in a mixer then add the milk, vinegar and oil and mix on a medium speed.

Add the cake mix on top of the caramel pecans in the cast iron then place in the grill and shut the lid to bake for approximately 40 – 45 minutes, checking periodically that the cake has cooked through to the centre.

Once cooked, remove from the heat and allow to cool for 30 minutes before flipping on to a serving plate. Tap to release the cake and enjoy!
