Add new potatoes to a pan with salted water and part cook. Cool down cut in half.

Get string and wrap around thyme to make a herb brush.

Chargrill the lemon half & the garlic and leave to cool, stuff lemon & garlic into chicken with some thyme and skewer onto the roister and place under metal tray dip your thyme brush into honey beer and dab over the chicken then season with a sprinkle of salt & pepper & turn on the BBQ and remove tray & every 10 minutes add tray back & dab the honey beer again over the chicken till cooked. If you have a probe, aim to get over 75°C.

Leave chicken to rest add potatoes half to the BBQ and char grill them don’t forget to dab with the thyme brush with the honey beer, when 1 side is down flip over and add tender stem and dab again then close lid for a few minutes then lift & dab again place onto a serving platter. Remove lemon and garlic, this should be tender, squeeze garlic over the potatoes and tender stem. Carve the chicken, add to the dish with the vegetables and squeeze over the lemon and a dab of the thyme. Brush again and serve
