Preheat the grill to 200°c.
2.
Melt the butter in a cast iron pan on the side burner and add the red onion. Stir until golden.

Add the cherries and the thyme and stir occasionally until the cherries soften.
4.
Add the red wine, balsamic vinegar, honey, mustard, salt and pepper.
5.
Allow the mixture to bubble away and stir to prevent sticking. Remove from the heat when the sauce has reduced and is nice and thick.
6.
Season your fillet steaks with plenty of salt and pepper then place over direct heat.
7.
Allow to sear until grill marks appear then flip and repeat on the other side. Remove from the heat when the steak has reached your desired finish.
8.
Allow the steak to rest for 10 minutes before slicing. Serve with cherry red wine sauce and perfectly salted frites.
